La corteza es amarillenta, suave, regular y no demasiado gruesa, y se va oscureciendo con la maduraci\u00f3n hacia un tono marr\u00f3n oxidado. La textura de la pasta es compacta, algo granulosa, con algunos ojos m\u00e1s o menos irregulares. El color de la pasta es amarillo p\u00e1lido. Se trata de un queso que desprende una gran fragancia. El asiago pressato es un queso fresco rico en grasa (al menos un 44%) y pobre en prote\u00edna. Se elabora exclusivamente con leche de vaca. Suele ser cil\u00edndrico.
